IMG_20150909_194636[1] Ingredients (Note: it is easiest to try to buy vegetables all close to the same Circumference.) salt & pepper & Thyme & Basil 1 cup shredded cheddar cheese 2-3 medium sweet vidalia onions (or substitute for yellow onions) 1 tsp minced garlic 1 Tbsp olive oil 1 medium zucchini 1 medium yellow squash 1 sweet potato (or sub for white potato) 1 medium tomato You could also use things like Carrots , Grey Zucchini etc. Instructions: Preheat the oven to 400 degrees. Dice the onion and mince the garlic. Cook both in pan with a dash of oil until softened. IMG_20150909_182527[1] While the onion and garlic are cooking, thinly slice the rest of the vegetables. Oil or spray 8×8 square baking dish. Place layer of the cooked onion and garlic in the bottom of the dish. IMG_20150909_184008[1] Thinly slice all vegetables about the same size. IMG_20150909_183021[1] Place the sliced vegetables in the dish vertically, alternating vegetables. Sprinkle with salt, pepper, basil and thyme. IMG_20150909_184602[1] Cover the dish with foil Bake for 30 minutes. Remove the foil, sprinkle cheese IMG_20150909_184753[1] Bake approximately 15 minutes until the cheese is golden.
